Crispy baked wings
Hot wings are a delicious guilty pleasure. After some research I think I have found the perfect way to make crispy oven backed chicken wings. These are a great alternative to fried wings and taste nearly identical. Plus you can try it out with different flavored sauces.
Ingredients:
2.5 lb chicken wings
1 tbsp baking powder
1 tbsp oil
1 tbsp salt or spice with salt
0.25 tsp black pepper
1 tsp of Herb de Province or Italian seasoning
0.5 cup of your favorite sauce. I'm using hot wings sauce. Can use teriyaki sauce, bbq sauce, honey garlic
Instructions:
- wings need to be completely defrosted
- Pat dry the wings to remove as much moisture as possible
- Preheat oven to 275 F
- Place wings in a large dry bowl (moisture is the enemy) and add the salt spice, I used umami flavor from Trader Joe's, black pepper, herb de province, and baking powder.
- Mix so each wing is nice and coated with the mixture
- Drizzle with a bit of oil, save rest
- Line a tray with foil, and set a wire rack (this will evenly heat the meat)
- Brush rack with remaining oil and place wings skin side up so the fat renders down into the meat Make sure all the wings are in one layer.
- Bake at 275 F for 20-25 minutes, until you see a nice light brown color
- After 20 -25 min increase temp to 400 F and bake for 40 -50 minutes, until skin is crispy golden brown.
- Can turn the tray and or flip the wings once in the middle of the bake time.
- Once baked remove wings from pan and toss in bowl with sauce of choice
- To achieve a nice sticky caramelized glaze, you can take the wings coated in sauce and stick back in oven for 5 minutes at 400 F.
And Voila! Crispy hot wings with no deep frying.
